My Top Twelve Meals That Don’t Need Any (or very minimal) Cooking
It’s been so hot in Sydney this summer and I have had requests from clients who have run out of things to make for dinner that don’t require cooking
So I put this list together
Feel free to grab a bbq chicken or tin of tuna or salmon to add to the vego meals
Or a lovely crusty loaf of sourdough bread to mop up the dressing
Or perhaps, like me, you don’t feel as hungry in the heat and like to keep it light and don’t need to add a thing!

French Green Lentils with Tomatoes, Goats Cheese and Basil – use a tin of lentils in place of cooking lentils
Kale Slaw – actually I have to admit that I usually add tuna or chicken to this! Vegos can add a tin of cannellini beans or lentils
Spinach and Tahini Slaw (recipe at the very bottom of the page) – again add tuna, chicken, beans or lentils
Greek Salad with Chicken Avocado and Chickpeas – grab a bbq chicken for this one
Tuna and Cannellini Bean Salad
Beetroot Lentil Feta and Walnut Salad
Kale Quinoa Edamame and Avocado Salad – use one of those 90 seconds in the microwave brown rice and quinoa mixes – add chicken or tuna if you like
Marinated Bean Salad – admittedly you need to blanch some green beans for this – that will take you a whole 3 mins!
Quinoa and Brown Rice California Rolls – again use one of those 90 second quinoa and brown rice mixes
Skip the cauli and double up on the chickpeas for a super quick dinner that only needs about 3-4 mins of stove time
AND A BONUS….
Thai Fish Cakes served with one of these salads – okay, admittedly these do require you cook them for about 2 mins either side, but they are worth it as they are so delicious and such a lovely light meal, perfect in hot weather. Besides, you could always cook them outside on the bbq!
