Whole Roasted Cauliflower with Dukkah and Hommus
Last week I got these two gorgeous mini cauliflowers from Alfalfa House
I’m a fan of whole roasted cauliflower as it is so easy
So I decided to do the same with these
And this recipe really couldn’t be any easier
First you steam the caulis for 5 mins
Then roast for 20-25 minutes
Remove and sprinkle with dukkah and return to the oven for 5 mins
Served on a bed of hommus (in this case it was roasted pumpkin hommus)
So when you scoop out the cauliflower, you get some of the hommus underneath
Yum!
Looks rather fancy-pants doesn’t it
But it really is easy
And deeelicious
I do hope you try it
- 2 baby cauliflowers
- extra virgin olive oil
- ¼ cup dukkah
- 1 cup hommus
- fresh coriander, garnish, optional
- Wash cauliflowers
- Cut the base of the stem off and cut a hollow out of the base
- Place in a steamer basket and cook for 5 minutes
- Heat oven to 180-190 degrees C and line a baking tray with baking paper
- Carefully transfer cauliflowers to the prepared baking tray
- Drizzle with a little olive oil
- Bake for 20-25 minutes, until golden on top
- Remove from oven and sprinkle liberally with dukkah
- Return to oven for 5 minutes
- Meanwhile 'smear' serving tray with hommus
- When cauliflower is done, place on top of hommus and sprinkle with any dukkah that has fallen off
- Garnish with coriander leaves and serve
- Enjoy
