Dukkah Roasted Cauliflower on Hommus

Ingredients
  • 2 baby cauliflowers
  • extra virgin olive oil
  • ¼ cup dukkah
  • 1 cup hommus
  • fresh coriander, garnish, optional
Instructions
  1. Wash cauliflowers
  2. Cut the base of the stem off and cut a hollow out of the base
  3. Place in a steamer basket and cook for 5 minutes
  4. Heat oven to 180-190 degrees C and line a baking tray with baking paper
  5. Carefully transfer cauliflowers to the prepared baking tray
  6. Drizzle with a little olive oil
  7. Bake for 20-25 minutes, until golden on top
  8. Remove from oven and sprinkle liberally with dukkah
  9. Return to oven for 5 minutes
  10. Meanwhile 'smear' serving tray with hommus
  11. When cauliflower is done, place on top of hommus and sprinkle with any dukkah that has fallen off
  12. Garnish with coriander leaves and serve
  13. Enjoy
