Polenta Porridge with Apple, Cinnamon, Raisins and Walnuts

It is just delicious (and very filling)!
Polenta Porridge with Apple, Cinnamon, Raisins and Walnuts

Serves: 3
Ingredients
- 1 cup (250ml) dairy, soy or other milk of choice
- 1 cup (250ml) water
- 1 medium apple, diced (don’t peel)
- ¼ cup raisins
- ¼ cup maple syrup or honey
- ¼ teaspoon cinnamon
- pinch of salt
- ½ cup cornmeal
- 2 tablespoons walnuts
Instructions
- Place the milk, water, apple, raisins, maple syrup, ⅛ teaspoon cinnamon and salt in a medium saucepan (that has a lid) and bring to the boil over medium heat.
- Add the polenta to the pot in a thin stream, stirring all the time with a wooden spoon so that it doesn't go lumpy.
- Turn the heat down to medium-low and simmer with a lid on, stirring every few minutes, for 10-15 minutes or until the polenta is cooked.
- Pour into 3 serving bowls and sprinkle with extra cinnamon and walnuts before serving.
- Thermomix Instructions:
- First fix butterfly attachment into bowl of thermomix.
- Place milk, water, diced apple, raisins, maple syrup, ⅛ teaspoon cinnamon and salt in the thermomix bowl.
- Turn on to cook for 12 minutes on 90 degrees, speed 2. Add the polenta in a thin stream through the mc hole as soon as the thermomix is turned on, then replace mc to continue cooking.
- When cooked pour into 3 serving bowls and sprinkle with extra cinnamon and walnuts before serving.
Per Serve: 1226kJ or 292 calories; P 6g Fat 6g SFat 0.5g CHO 54g Fibre 5g

HI Caroline, is it possible to reheat this or does it just turn into a lump? I would love to make a batch and then have it for brekkie for the next few days. It looks amazing and I love polenta!
Hi Teresa – you are right, polenta can go quite firm when it cools, but if you make it quite a bit ‘sloppier’ (sorry, that doesn’t sound attractive but I couldn’t think of a better term!) you should find that it doesn’t actually form a lump!! I have another polenta pudding recipe which I have actually reheated and had for breakfast which doesn’t go lumpy and is also very delicious! Please let me know how you go 🙂 Caroline

What’s the cornmeal for, I don’t have it here in Portugal. And do you just add it in at the start or sprinkle on at the end. Any options if I can’t find it

Hey Sharen. Cornmeal is just dried corn that has been ground. Here in Australia it is usually yellow, but also can be white. Sometimes its also called polenta although technically that is when it is cooked! Polenta porridge is just a yummy change from our regular oat porridge. It’s probably too hot for porridge in Portugal anyways!
Oh I just googled and found that they make a cornmeal bread in Portugal called Pao de Milho http://portuguesediner.com/tiamaria/pao-de-milho/ Mmmmm!
And I found this too http://www.myportuguesekitchen.com/2015/06/milho-frito.html – which looks yummy! So you should be able to get it!
