Layered Strawberry Coconut Chia Puddings

I’m finally back from holidays, but as it’s been incredibly hot here in Sydney, my husband has banned me from cooking anything!
At the same time though, when it’s this hot, I don’t really want to eat that much – or what I do eat needs to be quite light
Like these puddings….
Great as a breakfast…topped with my nutty granola as per below.…snack or dessert
They are light, refreshing and incredibly quick and easy to make
In fact, you can make all the bits in parts, which will take about 10 minutes, then construct just before you are ready to eat….
And the strawberry layer is delicious used as a ‘sauce’ or alternative to a coulis on baked cheesecakes, chocolate mousse or just drizzled over yoghurt and muesli for breakfast

- 250 gram punnet of strawberries, washed
- 3 tablespoons chia seeds
- ¾ cup coconut milk (or milk of choice)
- 2 - 4 teaspoons honey or maple syrup (depending on your level of sweetness!)
- Granola, optional
- For the strawberry layer:
- Start by hulling the strawberries, then add to the bowl of a food processor and blend until smooth
- Add 1 tablespoon of chia seeds and blend again until well combined
- Pour into a bowl and set aside in the fridge for at least one hour, or until needed
- For the coconut layer:
- Add coconut milk, honey and 2 tablespoons of chia seeds to food processor bowl and blend until well combined
- Pour into a bowl and set aside in the fridge for at least one hour, or until needed
- To construct puddings:
- Start by placing some strawberry puree in the base of 2 serving glasses
- Top with chia pudding
- Then more strawberry puree
- Top with granola if using
- Serve and enjoy
I prefer to use organic strawberries
I ‘whizzed’ up everything in my thermomix, but any food processor will work
