Cannellini Bean and Zucchini Burgers
For this week’s Meat free Monday I made these super quick cannelini bean and zucchini burgers. Served with Beerenberg Chilli Jam (available at Woolworths) and salad, they made a very tasty meal.
Very quick to make, I used only one bowl (= minimal mess & washing up, yeah!) and made them on the weekend, so all we had to do was reheat them on Monday and throw a salad together to go with them (I do love a 5 minute meal!)
I ate 2, my husband had 3. That meant I had one left for lunch on Tuesday, which I had with a tin of tuna and salad. Yum! 🙂
Cannelini Bean and Zucchini Burgers
Makes 6 (approx 7cm) burgers (Serves 2)
- 1 x 400g can cannellini beans, drained and rinsed
- 2 cloves garlic, crushed
- 1/2 red onion, finely chopped
- 1 egg, beaten
- 2 tablespoons wholemeal flour
- 2 small zucchinis (150g), grated
- 1/2 teaspoon salt
- pepper
- 1 tablespoon extra virgin olive oil
Directions:
- Place beans in a medium sized bowl and mash roughly
- Add garlic, onion, egg, flour, zucchinis, salt and pepper and mix well
- Heat a frying pan over medium heat. When hot, add oil, then spoon mixture into pan and press down slightly to flatten
- Cook for about 3 minutes either side, until golden brown
- Remove from pan and place on absorbent paper towel. Serve immediately, or allow to cool and store in the fridge. To reheat, microwave for approx 30 seconds each
