Sticky Date and Banana Puddings
Do you love sticky date pudding?
It’s an all-time favourite in our house – YUM!
I have just created a luscious, scrumptious healthier version that you simply must try…
You won’t believe it but these puds have 1/3 of the regular amount of sugar
Yet they’re still plenty sweet enough thanks to these gorgeous Medjool dates and bananas
Instead of using butter, I used macadamia oil, which is a healthy source of mononunsaturated fat like olive oil
Locally produced, macadamia oil is now easily available in most supermarkets (yay!)
These gorgeous little puddings are so lovely and light
They don’t really need a sauce, they’re great on their own
However, I made a super-fast sauce by simply mixing together coconut milk and coconut syrup, which is lip-smackingly delicious
You won’t need much though as it is very rich
You simply must try these
They’re really quick and easy to make
Absolutely delicious
And while the serving size is quite small, it’s perfectly adequate to satisfy the sweetest of cravings

- 12 Medjool
dates, pitted (160 grams when pitted) - 1 teaspoon bicarb soda
- 1 cup boiling water
- 2 over-ripe bananas
- 1 cup wholemeal plain flour*
- 2 teaspoons baking powder
- 1 teaspoon psyllium husks (optional)
- ¼ cup macadamia oil
- ⅓ cup
rapadura or soft brown sugar - 2 medium eggs (100 grams without the shell)
- Caramel Sauce
- ⅓ cup coconut milk
- 2 tablespoons coconut syrup
- Start by placing the pitted dates in a small bowl
- Add the bicarb and boiling water and set aside for 15 minutes until cooled
- Meanwhile, mash the bananas and set aside
- Sift flour, baking powder and psyllium together and set aside
- Preheat oven to 175 degrees and either grease your mini bundt trays or line muffin trays with paper
- When cool, add the dates and bananas to the bowl of a food processor and blend until smooth
- Speed 6 for 10 seconds in
thermomix - Remove from bowl
- Add oil, sugar and eggs to bowl and blend together
- Speed 4 for 10 seconds in
thermomix - Add blended date mix and flour to
bowl and mix until just combined - Speed 4 for 6 seconds in
thermomix - Pour into trays and bake for 15-20 minutes
- Allow
to cool for 5 mins before removing from tray - To make
caramel sauce, mix together coconutmik and coconut syrup - Drizzle over puddings
- VARIATIONS:
- *For a gluten free version, replace plain flour with buckwheat flour and add 1 extra teaspoon of psyllium husks
- Sticky Date, Banana and Ginger Puddings - Add 1 teaspoon of ground ginger or around 2 tablespoons of chopped crystalised ginger to the batter along with the flour
- Sticky Date and Apple or Pear Puddings - Replace banana with ¾ cup pureed stewed apple or pears
