Sticky Date and Banana Puddings

Ingredients
  • 12 Medjool dates, pitted (160 grams when pitted)
  • 1 teaspoon bicarb soda
  • 1 cup boiling water
  • 2 over-ripe bananas
  • 1 cup wholemeal plain flour*
  • 2 teaspoons baking powder
  • 1 teaspoon psyllium husks (optional)
  • ¼ cup macadamia oil
  • ⅓ cup rapadura or soft brown sugar
  • 2 medium eggs (100 grams without the shell)
  • Caramel Sauce
  • ⅓ cup coconut milk
  • 2 tablespoons coconut syrup
Instructions
  1. Start by placing the pitted dates in a small bowl
  2. Add the bicarb and boiling water and set aside for 15 minutes until cooled
  3. Meanwhile, mash the bananas and set aside
  4. Sift flour, baking powder and psyllium together and set aside
  5. Preheat oven to 175 degrees and either grease your mini bundt trays or line muffin trays with paper
  6. When cool, add the dates and bananas to the bowl of a food processor and blend until smooth
  7. Speed 6 for 10 seconds in thermomix
  8. Remove from bowl
  9. Add oil, sugar and eggs to bowl and blend together
  10. Speed 4 for 10 seconds in thermomix
  11. Add blended date mix and flour to bowl and mix until just combined
  12. Speed 4 for 6 seconds in thermomix
  13. Pour into trays and bake for 15-20 minutes
  14. Allow to cool for 5 mins before removing from tray
  15. To make caramel sauce, mix together coconut mik and coconut syrup
  16. Drizzle over puddings
  17. VARIATIONS:
  18. *For a gluten free version, replace plain flour with buckwheat flour and add 1 extra teaspoon of psyllium husks
  19. Sticky Date, Banana and Ginger Puddings - Add 1 teaspoon of ground ginger or around 2 tablespoons of chopped crystalised ginger to the batter along with the flour
  20. Sticky Date and Apple or Pear Puddings - Replace banana with ¾ cup pureed stewed apple or pears
