Apple Oat Bran Muffins
O.K. confession time….I’m not really a breakfast person
I know ‘they’ say that breakfast is the most important meal of the day, but actually, I don’t agree (was that a gasp I heard?).
I do agree that it’s a good idea to eat something for breakfast
And a healthy option is a great way to start the day as you are more likely to continue eating well for the rest of the day
But I am not someone who gets really hungry at breakfast, and a bowl of cereal is usually too much for me
However a muffin…well….now we’re talking!
Especially one of these muffins
You may notice that this recipe is a variation on my last recipe – sticky date and banana puddings
I replaced the bananas with apple
Reduced the flour a little and added oat bran
Plus I reduced the sugar and added blackstrap molasses which gives the muffins a lovely deep dark colour
And slightly chewier texture…
We had some blueberries in the fridge, so I added them to half of the muffins, which was a lovely addition
But they are just as delicious without
Easy to make and absolutely deeelicious
I hope you give these muffins a go
- 12 Medjool dates, pitted (180 grams when pitted)
- 1 teaspoon bicarb soda
- 1 cup boiling water
- ¾ cup wholemeal plain flour*
- 2 teaspoons baking powder
- ½ cup oat bran
- 1 teaspoon psyllium husks (optional)
- ¾ cup stewed apple or apple puree
- ¼ cup macadamia oil
- 1-2 tablespoons molasses (or just 1 extra tablespoon of sugar)
- 2 medium eggs (100 grams without the shell)
- blueberries, optional
- Start by placing the pitted dates in a small bowl
- Add the bicarb and boiling water and set aside for 15 minutes until cooled
- Sift flour, baking powder, oat bran and psyllium together and set aside
- Preheat oven to 175 degrees and line muffin trays with paper (see below on how to do this)
- When cool, add the dates and apples to the bowl of a food processor and blend until smooth
- Speed 6 for 10 seconds in
thermomix - Remove from bowl
- Add oil, sugar, blackstrap molasses and eggs to bowl and blend together
- Speed 4 for 10 seconds in
thermomix - Add blended date mix and flour to
bowl and mix until just combined - Speed 4 for 6 seconds in
thermomix - Pour into prepared muffin trays and bake for 15-20 minutes
- Allow
to cool for a few mins before removing from tray - Store muffins in airtight container
