Carrot and Apple Cake

Serves: 12
Ingredients
- 1½ cups soft wholemeal flour
- 1½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ¼ cup raisins or sultanas
- 2 medium (250g) carrots (approx 2 cups when) grated
- 1 medium (160 g) apple, unpeeled (approx 1 cup when) grated
- 2 large eggs
- ¼ cup macadamia or extra virgin olive oil
- ⅓ cup honey
- 1 teaspoon vanilla
- 1 tablespoon pumpkin seeds, optional
Instructions
- Heat oven to 170 degrees
- Grease and line a 20 cm (8 inch) round cake tin
- Sift together flour, baking powder, cinnamon and ginger into a large bowl
- Add sultanas, carrot and apple. Set aside
- In a smaller bowl, whisk eggs, then add in oil, honey and vanilla. Whisk until well combined
- Pour wet ingredients into dry ingredients and stir through carefully until just combined
- Pour mixture into prepared tin and bake for 35-40 minutes, until a skewer poked into the middle comes out clean
- Cool before cutting
Per Serve: 710 kJ or 169 calories; P 4g Fat 6g SFat 0.7g CHO 24g Fibre 3g
Best eaten within 3 days of making
Store in an airtight container
Can you advise is it 170 degrees fan oven or standard oven?
Hi Gaynor – good question! It is 170 degrees in a fan forced oven, so most likely 180 in a standard oven. Kind regards, Caroline
Seems like it would be more like 300 degrees in my oven. I’ve never baked anything at 170 degrees.
Hi Carolyn – yes I forget to include 170 degrees C which is around 340 degrees F – we tend to mostly use celsius in Australia!

Just made this for afternoon tea using pears rather than apple. Kids loved it. Next time I’d half the amount of ginger as it quite overpowering. Nice moist cake though.
