Carrot and Apple Cake

Ingredients
  • 1½ cups soft wholemeal flour
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ cup raisins or sultanas
  • 2 medium (250g) carrots (approx 2 cups when) grated
  • 1 medium (160 g) apple, unpeeled (approx 1 cup when) grated
  • 2 large eggs
  • ¼ cup macadamia or extra virgin olive oil
  • ⅓ cup honey
  • 1 teaspoon vanilla
  • 1 tablespoon pumpkin seeds, optional
Instructions
  1. Heat oven to 170 degrees
  2. Grease and line a 20 cm (8 inch) round cake tin
  3. Sift together flour, baking powder, cinnamon and ginger into a large bowl
  4. Add sultanas, carrot and apple. Set aside
  5. In a smaller bowl, whisk eggs, then add in oil, honey and vanilla. Whisk until well combined
  6. Pour wet ingredients into dry ingredients and stir through carefully until just combined
  7. Pour mixture into prepared tin and bake for 35-40 minutes, until a skewer poked into the middle comes out clean
  8. Cool before cutting
