Fig, Rocket and Feta Salad
I found these at Alfalfa house today…
They were just begging to be made into one of my favorite salads…
I just adore figs, they are so delicious, and really healthy as well!
Among other wonderful attributes, they are a great source of fibre,magnesium, potassium and Vitamin B6
This is a super-quick salad that will take less than 5 minutes to make
Today I did a little twist on the regular balsamic dressing I do, as I added pomegranate molasses. I love this stuff…
This makes a huge change to the regular (boring) lettuce, tomato, cucumber (yawn) salads and goes great with anything. Try it with pan-fried fish, or chicken…
Oh and if you don’t have any fresh figs, I also make it with dried figs and add walnuts!

- 50g or 2 handfuls of rocket (or mixture of baby spinach and rocket), washed and dried well
- 2 figs (or 1½ if really large)
- 20g feta cheese
- Dressing:
- 2 teaspoons balsamic vinegar
- 2 teaspoons pomegranate molasses (or just use all balsamic vinegar and perhaps 1 teaspoon of honey)
- 1 tablespoon extra virgin olive oil
- Sprinkle rocket onto serving plate
- Cut figs into quarters and place on top of rocket
- Sprinkle with crumbled feta cheese
- Into a small jar pour the vinegar, molasses and olive oil
- Place lid on jar and shake well
- Pour evenly over salad
- Get tucked in and enjoy 🙂
