I thought I’d share my latest favourite hommus version with you
My Thai Chilli and Lime Hommus….
It’s so quick and easy to make, absolutely delicious
And such a healthy and filling snack option
It’s sure to be a hit when entertaining too
Especially when served with my seedy crackers

Thai Chilli & Lime Hommus

Serves: 10
Ingredients
- 1 x 400g can chickpeas, drained and rinsed (or 1⅓ cups cooked chickpeas)
- 1-2 cloves of garlic
- 2-3 tablespoons of freshly squeezed lime juice
- 2 tablespoons of tahini
- ½ cup fresh coriander, roughly chopped
- 1 tablespoon sweet chilli sauce
- ¼-1/2 large Thai red chilli, deseeded and finely chopped
- ¼-1/2 teaspoon salt
- 2-4 tablespoons water, approx
- extra virgin olive oil to serve, optional
- extra coriander to garnish, optional
Instructions
- Place chickpeas, garlic, lime juice, tahini, coriander, sweet chilli sauce, red chilli and salt in the bowl of a food processor and process until smooth.
- Add water gradually to get the consistency you like (I like to make my
hommus quite soft as it usually firms up as it sits!) - Taste and adjust as needed (i.e. add more salt as needed)
- Transfer to serving dish and drizzle with a little olive oil and sprinkle with extra coriander
- Serve with veggies or my seedy crackers (link to recipe above)
