Chocolate, Pecan and Raisin Biscuits

Ingredients
  • 1 cup wholemeal plain flour
  • ½ teaspoon bicarbonate of soda
  • 1 cup whole rolled oats
  • ½ cup chocolate chips
  • ½ cup raisins
  • ½ cup pecans, roughly chopped
  • ½ cup macadamia oil
  • 1 tablespoon ground linseeds
  • 3 tablespoons water
  • ½ cup brown sugar
  • 1 teaspoon pure vanilla extract
Instructions
  1. Heat oven to 170 degrees and line two baking trays with greaseproof paper.
  2. Sift the flour and bicarb soda into a medium sized bowl and add the oats, chocolate chips, raisins and pecans. Stir to combine.
  3. Into the bowl of a food processor add the oil, linseeds, water, sugar and vanilla and process until well combined.
  4. Pour the oil mixture into the flour mixture and mix together.
  5. Using a soup spoon, scoop out balls of mix onto prepared trays and press lightly to flatten slightly.
  6. Bake for 12 minutes, until lightly browned
  7. Store cooled biscuits in an airtight jar
