Thai Chilli & Lime Hommus

Ingredients
  • 1 x 400g can chickpeas, drained and rinsed (or 1⅓ cups cooked chickpeas)
  • 1-2 cloves of garlic
  • 2-3 tablespoons of freshly squeezed lime juice
  • 2 tablespoons of tahini
  • ½ cup fresh coriander, roughly chopped
  • 1 tablespoon sweet chilli sauce
  • ¼-1/2 large Thai red chilli, deseeded and finely chopped
  • ¼-1/2 teaspoon salt
  • 2-4 tablespoons water, approx
  • extra virgin olive oil to serve, optional
  • extra coriander to garnish, optional
Instructions
  1. Place chickpeas, garlic, lime juice, tahini, coriander, sweet chilli sauce, red chilli and salt in the bowl of a food processor and process until smooth.
  2. Add water gradually to get the consistency you like (I like to make my hommus quite soft as it usually firms up as it sits!)
  3. Taste and adjust as needed (i.e. add more salt as needed)
  4. Transfer to serving dish and drizzle with a little olive oil and sprinkle with extra coriander
  5. Serve with veggies or my seedy crackers (link to recipe above)
