Apple Oat Bran Muffins

Ingredients
  • 12 Medjool dates, pitted (180 grams when pitted)
  • 1 teaspoon bicarb soda
  • 1 cup boiling water
  • ¾ cup wholemeal plain flour*
  • 2 teaspoons baking powder
  • ½ cup oat bran
  • 1 teaspoon psyllium husks (optional)
  • ¾ cup stewed apple or apple puree
  • ΒΌ cup macadamia oil
  • 1-2 tablespoons molasses (or just 1 extra tablespoon of sugar)
  • 2 medium eggs (100 grams without the shell)
  • blueberries, optional
Instructions
  1. Start by placing the pitted dates in a small bowl
  2. Add the bicarb and boiling water and set aside for 15 minutes until cooled
  3. Sift flour, baking powder, oat bran and psyllium together and set aside
  4. Preheat oven to 175 degrees and line muffin trays with paper (see below on how to do this)
  5. When cool, add the dates and apples to the bowl of a food processor and blend until smooth
  6. Speed 6 for 10 seconds in thermomix
  7. Remove from bowl
  8. Add oil, sugar, blackstrap molasses and eggs to bowl and blend together
  9. Speed 4 for 10 seconds in thermomix
  10. Add blended date mix and flour to bowl and mix until just combined
  11. Speed 4 for 6 seconds in thermomix
  12. Pour into prepared muffin trays and bake for 15-20 minutes
  13. Allow to cool for a few mins before removing from tray
  14. Store muffins in airtight container
