Green Papaya Salad

  • 3 teaspoons of grated palm sugar or brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • ½ - 1 teaspoon sesame oil
  • ½ long red chilli, seeds removed, finely chopped, optional
  • ½ green papaya, shredded (a mandolin is ideal)
  • 1 carrot, shredded
  • 2 cups bean sprouts, rinsed and drained well
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh coriander, chopped - or 1 tablespoon Vietnamese mint
  • ¼ cup toasted cashews or peanuts, roughly chopped
  • Optional Extras
  • Garlic
  • Mango
  • Cooked chicken or prawns
  • Thai fish cakes
  • Salt and pepper or sesame crusted tofu
  • Cherry tomatoes
  • Green or Snake beans
  • Cucumber, Red capsicum or Snow peas
  1. Mix the sugar with 1 tablespoon of boiling water and stir to dissolve.
  2. Combine the dissolved sugar, fish sauce, lime juice and sesame oil in a medium-large bowl.
  3. Add the chilli, papaya, carrot, sprouts and herbs to the bowl and toss to combine.
  4. Transfer salad to serving platter and scatter the nuts over the top just before serving
