Apple Walnut and Oat Bars

- 2 apples, 350 grams, unpeeled, cored and roughly chopped
- ¼ cup macadamia or extra virgin olive oil
- ¼ cup honey or maple syrup
- 2 cups whole rolled oats
- ¼ cup currants, sultanas cranberries or other dried fruit
- 1 tablespoon linseeds, optional
- 1 heaped teaspoon cinnamon
- ⅔ cup walnuts, roughly chopped, optional
- Heat oven to 170C and line a small slice tray with grease-proof baking paper
- Place apples in bowl of a food processor and chop until well pureed, so they look like a raw apple sauce
- Meanwhile, add oil and honey to a saucepan and heat gently until the mix starts to form bubbles around the edges
- Add apples to saucepan and cook for 2 minutes
- Then mix in oats, linseeds (if using) and cinnamon
- Press mixture into prepared tray
- Sprinkle walnuts evenly over the top, if using them
- Bake for 25-30 minutes
- Cool slightly before eating
