Barbecued Cauliflower Steaks with Romesco Sauce

Ingredients
  • 1 medium cauliflower
  • 3-4 tablespoons extra-virgin olive oil
  • 3 roasted capsicums (approx 1 cup, 200 grams)
  • ½ cup (80 grams) toasted cashews
  • 2 cloves garlic
  • ¼ teaspoon salt
  • Persian feta or toasted hazelnuts, optional
Instructions
  1. Cut cauliflower in half, then cut each half in half length ways to make 2 cauliflower 'steaks'
  2. You can also cook the round end bits, or set aside and use for something else
  3. Brush both sides with a little oil, season with salt and pepper and place on a medium-hot barbecue
  4. Cook on each side for approx 10 minutes, depending on how thick your steaks are and how hot the bbq is
  5. Alternatively you can roast them at 220 degrees C for around 30-40 minutes, flipping once about halfway through, until golden brown
  6. While the steaks are cooking, make the romesco sauce
  7. Place capsicums in food processor along with cashews, garlic and salt
  8. Puree until smooth
  9. Then drizzle in 1-2 tablespoons extra virgin olive oil, if you can, while the motor is running
  10. Continue to blend until well combined
  11. Either top steak with romesco sauce, or spread sauce over the base of a plate and place cauliflower steaks on top
  12. Garnish with fresh herbs and feta or hazelnuts if you like
