Chocolate Chia Mousse

1 tablespoon raw cacao powder 1 tablespoon pure maple syrup 1 cup Vitasoy soy milky lite (or milk of your choice) 2 tablespoons sustainably farmed, locally grown chia seeds
Ingredients
  • 1 tablespoon raw cacao powder
  • 1 tablespoon pure maple syrup
  • 1 cup Vitasoy soy milky lite (or milk of your choice)
  • 3 tablespoons (sustainably farmed, locally grown) chia seeds
Instructions
  1. Place cacao powder and maple syrup in a medium bowl and mix together until well combined and smooth
  2. Slowly add soy milk and mix well
  3. Stir in chia seeds and continue to stir for at least 30 seconds so that they don't clump together
  4. PLACE IN THE FRIDGE FOR 30 MINUTES while you organise your serving dishes (and clean up etc etc)
  5. Remove from fridge AND STIR AGAIN for another 30 seconds (alternatively you can place the mix in a jar with a tight fitting lid and shake it until well combined)
  6. Pour into serving bowls and return to the fridge for at least 30 minutes, or overnight
  7. Serve topped with a mixture of blueberries and raspberries (I used frozen, thawed berries)
