Fully Loaded Guacamole

Serves: 2 cups approx
  • 2 ripe avocados
  • Juice from ½ lime
  • 8 cherry tomatoes, cut into quarters
  • 50 grams feta, crumbled
  • ½ small bunch coriander, roughly chopped
  • salt and pepper to taste
  1. Scoop out flesh from the avocados and add them to a bowl with the lime juice
  2. Mash well together
  3. Fold in tomatoes, feta and coriander
  4. Taste and add salt and pepper as necessary
  5. Store in air-tight container in the fridge for up to 3 days
