My Healthier Chocolate Chip Cookies

- 3 tablespoons (50 grams) coconut oil, softened
- ¼ cup brown sugar
- 1½ tablespoons raw sugar
- 1 egg white, from a large sized egg
- 1 teaspoon vanilla
- ½ cup wholemeal spelt flour
- ½ cup white spelt flour
- ½ teaspoon bicarb soda
- 30 grams good quality chocolate, roughly chopped
- Heat oven to 160 degrees C and line a large baking tray with greaseproof paper
- Whisk together coconut oil and sugars
- Whisk in egg white and vanilla
- Sift flour and bicarb soda into the bowl and add the chocolate
- Fold dry ingredients into coconut oil mix until just combines
- Roll into teaspoon sized rounds, place on tray and press down slightly using a fork
- Bake for 8 minutes
