¼ cup (60 grams) firmly packed pitted medjool dates
¼ cup (40 grams) firmly packed Australian dried apricots
½ cup (75 grams) raw macadamia nuts
1 teaspoon ground ginger (or use fresh if you have it)
Instructions
Heat oven to 150 degrees and line a baking tray with greaseproof paper.
Place dates, apricots, macadamias and ginger in the bowl of a food processor (or thermomix) and process until well combined (20 seconds speed 4, then 30 seconds speed 7 in thermomix)
Tip mix into a bowl or onto a board and divide the mix in half evenly. Then divide each half in half and so on until you end up with 16 even sized pieces
Roll each into a ball and place on prepared oven tray. Press down (note they don't spread when they cook so squash them as flat as you would like them!)
Bake for 18 minutes, or until just browned - note, these biscuits can burn easily so keep a close eye on them
Cool before eating
When cold, store in an airtight jar (hopefully there are some left!)
