Raw Christmas Stars

Serves: 34 stars
  • ½ cup (55 grams) cashews
  • ¼ cup (25 grams) desiccated coconut
  • 2 tablespoons (20 grams) pumpkin seeds
  • 2 tablespoons (20 grams) sunflower seeds
  • 1½ tablespoons (15 grams) goji berries
  • 1 tablespoon chia seeds
  • 3 large medjool dates (60 grams when pitted)
  • 1 tablespoon water
  • 1 teaspoon maple syrup
  1. Place all ingredients into the bowl of a blender or thermomix and blend until combined. Note - I like them to be a bit textured, so I blend them until only just combined.
  2. Line a 20 cm square pan with greaseproof paper.
  3. Press mix to cover half of the bottom of the pan. Fold the other half of the paper over and use to press the top down flat.
  4. Place in the fridge for at least 2 hours or overnight to firm up.
  5. To make stars: use a star cutter to press out stars.
  6. Use a bowl with warm water to dip the cutter in between stars.
  7. When you have finished cutting out the stars, repress the remaining mix flat so that you can cut more stars out.
  8. Alternatively this mix can simply be cut into slices or you can roll it into balls.
