Apple Walnut and Oat Bars

Ingredients
  • 2 apples, 350 grams, unpeeled, cored and roughly chopped
  • ¼ cup macadamia or extra virgin olive oil
  • ¼ cup honey or maple syrup
  • 2 cups whole rolled oats
  • ¼ cup currants, sultanas cranberries or other dried fruit
  • 1 tablespoon linseeds, optional
  • 1 heaped teaspoon cinnamon
  • ⅔ cup walnuts, roughly chopped, optional
Instructions
  1. Heat oven to 170C and line a small slice tray with grease-proof baking paper
  2. Place apples in bowl of a food processor and chop until well pureed, so they look like a raw apple sauce
  3. Meanwhile, add oil and honey to a saucepan and heat gently until the mix starts to form bubbles around the edges
  4. Add apples to saucepan and cook for 2 minutes
  5. Then mix in oats, linseeds (if using) and cinnamon
  6. Press mixture into prepared tray
  7. Sprinkle walnuts evenly over the top, if using them
  8. Bake for 25-30 minutes
  9. Cool slightly before eating
