Layered Strawberry Coconut Chia Puddings

Ingredients
  • 250 gram punnet of strawberries, washed
  • 3 tablespoons chia seeds
  • ¾ cup coconut milk (or milk of choice)
  • 2 - 4 teaspoons honey or maple syrup (depending on your level of sweetness!)
  • Granola, optional
Instructions
  1. For the strawberry layer:
  2. Start by hulling the strawberries, then add to the bowl of a food processor and blend until smooth
  3. Add 1 tablespoon of chia seeds and blend again until well combined
  4. Pour into a bowl and set aside in the fridge for at least one hour, or until needed
  5. For the coconut layer:
  6. Add coconut milk, honey and 2 tablespoons of chia seeds to food processor bowl and blend until well combined
  7. Pour into a bowl and set aside in the fridge for at least one hour, or until needed
  8. To construct puddings:
  9. Start by placing some strawberry puree in the base of 2 serving glasses
  10. Top with chia pudding
  11. Then more strawberry puree
  12. Top with granola if using
  13. Serve and enjoy
