Caramel or Chocolate Bliss Balls

Serves: 40 balls each
- Caramel Bliss Balls
- 1 cup (150 grams) cashews
- ½ cup desiccated coconut, plus extra for rolling (optional)
- 2 tablespoons pumpkin seeds
- 1 tablespoon chia seeds
- 12 large (225 grams) medjool dates, pitted (210 grams when pitted)
- 2 tablespoons water
- 1 tablespoon maple syrup
- OR
- Chocolate Bliss Balls
- 1 cup (110 grams) cashews
- ½ cup (50 grams) raw cacao powder
- ¼ cup coconut, plus extra for rolling (optional)
- 4 tablespoons peanut butter*
- 3 tablespoons honey or maple syrup
- 3 tablespoons water
- Caramel Bliss Balls
- Place ingredients in a food processor or thermomix and process until well combined
- If you like them more textured blend for less time, for a smoother texture, blend for longer
- Using a teaspoon and damp hands, roll mixture into small balls
- Roll in either coconut or crushed nuts (crushed pistachios look good)
- Chocolate Bliss Balls
- Place cashews in a food processor or thermomix and process until finely chopped
- Add remaining ingredients to the bowl and process again until well combined
- If you like them more textured blend for less time, for a smoother texture, blend for longer
- Using a teaspoon and damp hands, roll mixture into small balls
- Roll in either raw cacao powder, coconut or crushed nuts
- Store in the fridge to stop your balls from going too soft!
